The same can be said for the American BBQ chefs. There are BBQ establishments held to such high standards you’d think the President and the Pope eat there every week. However, have no fear because the BBQ in Buffalo is so good it’s said to put a tear in your eye (and it’s not all from the smoke).
BBQ is a traditional type of thing. Everyone’s got their own way of how to do it “right”. Some might put extra sauce, another might only go for a dry rub no more, no less. What one person deems as odd, another may deem as absolutely essential.
So to cut out all the fine points, (and possible fist fights – people tend to get very defensive over their BBQ and all that comes with it) you have plenty of spots serving BBQ in Buffalo Niagara where you can sit down, eat and enjoy the company of family and friends without having to worry if you’re uncle is hogging the sauce (he just doesn’t get that it’s supposed to be for everyone).
Brisket, Pulled Pork, Mac ‘n Cheese – Oh My
Fat Bob’s smokehouse specializes in bulk items one pound of beef brisket, one pound of pulled pork or chicken, baked beans, etc. They’re all delicious, and they most certainly better be if you’re going to get a one pound of meat. But I primarily get it for family gatherings and whatnot. I have yet to attempt to eat one of their bulk meals myself (maybe if I decide to train for a professional eating competition one of these days I’ll give it a shot.)

Bringing Southern Tradition to WNY
The interesting thing about good BBQ is it tends to be a bit more on the expensive side, but it’s well worth it due to the incredibly tedious process many of these cuts of meat are taken to before even being placed over the fire/smoke. We’re talking, in some cases, up to 14 hours of marinating, then slow cooking, followed by the oh so delicate balancing act of seasoning. In my opinion, they should hire a person just for this job, but times are tough, and the pros tend to do a good job as is. But wouldn’t it be better if you had one person that was solely dedicated to that one task?

Fork Don’t Lie
If you think about it, the sheer patience many of these pros must have to make sure the finished product is always fall off the bone delicious is astounding. I have half a mind that these same people sitting over the fire slowly turning slabs of meat into finely cooked perfection have the patience of saints (then again, this is the 21st century, so maybe they’re on their phones the whole time as they wait – hey, whatever gets the meat to fall off the bone).
BBQ represents a lot of things to a lot of different people. It means a time to get together with friends and family, catch up and enjoy a good meal. To some it symbolizes home, bringing a piece of where they grew up back to them with every bite. As for myself, BBQ means it’s time to do some cardio before I order another serving.
