You know something special is underway when you hear that sizzle from the grill, followed by the smoke. Any other context smoke would be the telltale sign to inform Smokey The Bear that trouble was afoot, but when it comes to grilling and the fantastic smoke that accompanies it, you tell Smokey to take the night off because we’re talking about good old-fashioned BBQ here and to get all the flavors in, you need a fair bit of smoke. BBQ is an art, the way Sushi Chefs are revered for their talents in Japan, taking many years to hone their skills in the craft.

The same can be said for the American BBQ chefs. There are BBQ establishments held to such high standards you’d think the President and the Pope eat there every week. However, have no fear because the BBQ in Buffalo is so good it’s said to put a tear in your eye (and it’s not all from the smoke).

BBQ is a traditional type of thing. Everyone’s got their own way of how to do it “right”. Some might put extra sauce, another might only go for a dry rub no more, no less. What one person deems as odd, another may deem as absolutely essential.

So to cut out all the fine points, (and possible fist fights – people tend to get very defensive over their BBQ and all that comes with it) you have plenty of spots serving BBQ in Buffalo Niagara where you can sit down, eat and enjoy the company of family and friends without having to worry if you’re uncle is hogging the sauce (he just doesn’t get that it’s supposed to be for everyone).

Brisket, Pulled Pork, Mac ‘n Cheese – Oh My

In my many travels trying to satisfy the BBQ beast that sometimes appears unexpectedly raging to be fed, I’ve found that the best way to feed said beast is by going to Fat Bob’s Smokehouse. Anyone that’s read some of my stuff by now knows I’ve become quite health-conscious these days, but sometimes you got to just say calories be dammed and just enjoy some good old BBQ.

Fat Bob’s smokehouse specializes in bulk items one pound of beef brisket, one pound of pulled pork or chicken, baked beans, etc. They’re all delicious, and they most certainly better be if you’re going to get a one pound of meat. But I primarily get it for family gatherings and whatnot. I have yet to attempt to eat one of their bulk meals myself (maybe if I decide to train for a professional eating competition one of these days I’ll give it a shot.)

Occasionally I’ll stop by for a pulled pork sandwich as a guilty pleasure but I try not to overindulge because upon finishing it and paying the bill, I have to run out to stop myself from ordering another. Not to mention they have a strange but delectable assortment of things on the menu that I’ve never heard of outside of this place. Ever heard of Catfish Fingers or Smokehouse Nachos? I have yet to try either out of fear of losing control and ordering multiple orders before bursting. But if any of you fine readers with much more self-control than I have wish to try them, let me know what you think.

Bringing Southern Tradition to WNY

The mark of a good spot for BBQ in Buffalo Niagara is whether or not it gives you a down South feel coupled with authentic southern cooking because, let’s be 100% honest here, the south is undoubtedly the Mecca for BBQ and with that distinction you have to make sure the fixings are in order. I’m talking coleslaw, black eyed peas, cornbread and the like. If your chosen establishment doesn’t have great fixings, simply walk out because bad fixings are an omen for bad BBQ.

The interesting thing about good BBQ is it tends to be a bit more on the expensive side, but it’s well worth it due to the incredibly tedious process many of these cuts of meat are taken to before even being placed over the fire/smoke. We’re talking, in some cases, up to 14 hours of marinating, then slow cooking, followed by the oh so delicate balancing act of seasoning. In my opinion, they should hire a person just for this job, but times are tough, and the pros tend to do a good job as is. But wouldn’t it be better if you had one person that was solely dedicated to that one task?

Fork Don’t Lie

If you think about it, the sheer patience many of these pros must have to make sure the finished product is always fall off the bone delicious is astounding. I have half a mind that these same people sitting over the fire slowly turning slabs of meat into finely cooked perfection have the patience of saints (then again, this is the 21st century, so maybe they’re on their phones the whole time as they wait – hey, whatever gets the meat to fall off the bone).

BBQ represents a lot of things to a lot of different people. It means a time to get together with friends and family, catch up and enjoy a good meal. To some it symbolizes home, bringing a piece of where they grew up back to them with every bite. As for myself, BBQ means it’s time to do some cardio before I order another serving.
