Every time I visit a bakery, I can’t help but reminisce about my first job. I was sixteen and new to the workforce. I remember the smell of hot, crusty bread pouring from commercial ovens and feeling the hot blast of air as I popped open the doors. There was the loud snap of plastic cookie boxes echoing off the walls and gloved fingers twisting discs of dough. A giant mixer swirled brownie batter around a metal bowl the size of a kiddie pool. A cake decorator worked quietly in the back corner, airbrushing vibrant colors on creamy frosting with a careful hand.

The experience was so sensory that it isn’t hard for my mind to slip back into that place, to feel like I’m once again filling bins with kimmelweck rolls and drizzling icing on cherry turnovers, laughing with my coworkers over a rogue frozen roll that was mistaken for a mouse, and gingerly holding out a bin of chocolate chip cookies to the little hands of sheepish but grateful children. To me, every bakery is a little slice of heaven – a reminder that life’s comforts aren’t far away.

The funny thing is, the bakery that I worked in was located in a very unromantic setting: a grocery store. Our cookies and rolls weren’t made from scratch- they were shipped on a frozen truck. Sure, we still baked them, but all of those fancy coffee cakes and Italian cookies? Those were merely defrosted and thrown on a display. If a customer had an allergy and wanted to know what was in a recipe, I would have to climb around boxes in the freezer and study labels. Never mind that those ingredient lists were much lengthier than your typical homemade coffee cake. We didn’t have the freedom or the time to modify a recipe. A personal touch was out of the question. If you wanted something personal, you could call ahead and choose a birthday cake from our catalog. Or you could choose a pre-made one and one of us might be able to pipe your child’s name in cursive.

Local & Love Always Takes the Cake

The other day, I went to the grocery store for a loaf of Italian bread. It wasn’t fresh from the oven. It wasn’t baked with love. The ingredients on the label made it clear that this wasn’t a sweet Italian grandmother’s secret recipe. It was cold and soft. It was kind of sad, really. I’d wanted something convenient, but in the process I’d missed out on something better.

If there’s one thing that the pandemic has taught many of us, it’s that sometimes we have to slow down. We get so caught up in our to-do lists that we forget to pause and savor the moment. During the lockdown, we had more time to spend with our family. We held them a little tighter. We baked chocolate chip cookies from scratch. It wasn’t convenient, but it was lovely.

Now that businesses have opened up again, we have less time to bake, but we don’t have to settle for chemical additives and a lack of personal touch. We have local bakeries that make fresh, hot bread from scratch every morning. We have Italian grannies with coveted family recipes. These bakers will carefully ensure that your child’s birthday cake isn’t cross-contaminated with nuts. We don’t have to sacrifice quality for convenience. We can have our cake and eat it, too.
